Hey everyone! Welcome back to my kitchen. Today, I'm showing you how to make the perfect pasta dough from scratch—just like the pros but with simple ingredients you already have at home. Whether you're making fettuccine, ravioli, or pappardelle, this dough is the foundation of great homemade pasta. Let’s get started!"

[Step 1: Ingredients & Prep]

You:

"All you need are four simple ingredients:


2 cups (250g) of '00' flour or all-purpose flour


2 large eggs


1 teaspoon of salt


A drizzle of olive oil (optional but adds silkiness)



First, clean your work surface—because we’re making this dough by hand, no mixers needed!"

[Step 2: Making the Dough]

You:

"Pour the flour onto your surface and shape it into a well—like a volcano. Crack the eggs into the center, add the salt, and if you're using olive oil, drizzle it in."


Show eggs sitting in the well, then start whisking with a fork.


"As you whisk, slowly pull in flour from the edges. This helps create a smooth dough without lumps."

[Step 3: Kneading]


Cut to hands kneading dough.


You:

"Once the mixture starts forming a rough dough, switch to your hands. Knead for about 8-10 minutes until it’s smooth and elastic. This builds gluten, which gives pasta that perfect bite."


Cut to pressing the dough with a finger—if it bounces back, it's ready.


"Now wrap it in plastic wrap and let it rest for at least 30 minutes. This relaxes the gluten, making it easier to roll out."

[Step 4: Rolling & Shaping]

"After resting, lightly flour your surface and roll out the dough. You can use a rolling pin or a pasta machine. If you're cutting by hand, fold it gently and slice into even strips."


Cut to different pasta shapes—tagliatelle, pappardelle, or even ravioli.


"Fresh pasta cooks fast! Boil in salted water for just 2-3 minutes, and you’re ready to enjoy."
